Easy & Tasty Beef & Broccoli Stir Fry

When you’re in a rush, nothing hits the spot like Chinese food. Those little take-out boxes full of chow mein, fried rice and beef and broccoli are mighty tasty – but did you know that most Chinese food is loaded with saturated fat, calories and salt?

Fear not: making satisfying, healthy Chinese food at home is easier than using a fork instead of chopsticks (does anyone really know how to hold their chopsticks?). Check out our easy Beef & Broccoli Stir Fry next time you need a Chinese food fix.

Ingredients:

  • Beef
  • Broccoli
  • Brown rice
  • Soy sauce
  • Beef broth (optional)
  • Brown sugar
  • Ginger
  • Salt
  • Cornstarch
  • Garlic powder

Instructions:

  1. First, throw on some brown rice.
  2. To make your stir fry sauce, add ⅓ cup soy sauce, 2 tbsp water or beef broth, 2 tbsp of brown sugar, ½ tbsp of ground ginger and a pinch of salt. Put aside.
  3. In a separate bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and 1 teaspoon of garlic powder until smooth.
  4. Add small chunks of steak to the bowl and toss together.
  5. In a large skillet or wok over medium high heat, cook beef in 1 tablespoon of oil until browned; remove the beef from the skillet.
  6. Next, cook chopped broccoli and onion in the remaining oil for 4-5 minutes.
  7. Throw your beef back in the skillet.
  8. Add your pre-made stir fry sauce to the pan.
  9. Cook and stir for 2 minutes.
  10. Serve over rice.

Heat a large wok over high heat. Add 2 tablespoons of the vegetable oil, and swirl to coat the wok. Once the oil begins to smoke, add the broccoli florets and stems. Cook, stirring constantly, until browned around the edges, about 2 minutes. Add 2 tablespoons of water to steam the broccoli, and cook, stirring constantly, until tender, about 2 minutes more. Push the broccoli to the edges of the pan, forming an empty well in the center. Add the remaining 1 teaspoon vegetable oil, then the scallions, garlic, ginger and pepper flakes, and stir until aromatic, 30 to 45 seconds. Add the soy mixture, and stir until the sauce has thickened and the broccoli is coated, about 30 seconds. Remove from the heat, add the sesame oil and stir to coat. Serve with rice.

Heat the olive oil in a wok, add the broccoli and fry for 2-3 minutes, or until starting to soften, then add the garlic and chilli and fry for 1-2 minutes.
