If it’s your turn to make dinner, chances are that box of Kraft Dinner hiding at the back of your cupboard looks mighty tempting right about now. But what if there was an even easier way to throw together a meal, with the added bonus of impressing your healthy dinner dates?
It’s called One-Pan Pesto Baked Chicken, so it’s easy to clean-up after dinner. This dish is low in saturated fats, packed with protein and most importantly, damn tasty!
All you need for this one is a jar of pesto and a couple of chicken breasts – the oven does the rest. But just to be safe, let’s break it down:
One-pan Pesto Baked Chicken
- Preheat oven to 400ºF.
- Toss chicken breasts in a baking dish and sprinkle with a bit of salt and pepper. Give the chicken a pesto bath and throw it in the oven.
- Bake for 25-30 minutes or until an instant-read thermometer registers 165ºF (74ºC) in the center, and Bam! You’re a culinary rockstar.
Pair with brown rice, yams or quinoa to make it a meal. Don’t be surprised if it becomes your weekly go-to.
